Curried Chickpeas and Gingered Black Beans

Recipe

Place rice, water, broccolli and carrots in a microwave-safe dish. Cover, place in microwave, and cook on HIGH until tender, for about 10 minutes. Cut onion into small wedges. Heat oil over medium-high heat in large nonstick skillet. Add tomatoes, chickpeas, black beans and salt to skillet and simmer for 5 minutes. Stir in lemon juice and parsley just before serving. Serve bean mixture over the rice and vegetables.
